This tradition is crucial for the nuanced flavor of Honduran coffee. Farmers will often pick only the ripest cherries, leaving others to mature, leading to multiple pickings throughout the harvest season (typically November to April). This dedication to quality is a cultural hallmark.

It's in these pristine highlands that the magic truly happens. The unique combination of rich soil composition, specific micro-climates, and ideal altitudes is paramount. These natural conditions are the secret behind the coffee's delicate sweet cocoa notes and its impressive overall flavor complexity.

You'll also notice the "HG" (High Grown) designation, indicating cultivation at altitudes between 4,000 and 4,500 feet.
